Well the h100i with a artic cooler for the gpu should be an extremely powerful combo. Should allow your 7700k to push into the 4.8-5ghz territory. For dual 120 aios, I think the recommended setup is a h60 or other similar aio that does not have the tubbing come out directly from the cpu block...
I would recommend a hybrid aio for the 1080ti and air cool the cpu vs double aio. But it really depends what your OC goal is with the 7700k.
The U9s is the top performing tower cooler for the M1.

Maybe the community can compile a theoretical min/max configuration with 60mm coolers. Dan mentioned the C1 in passive mode but that would be 61mm and would require a lot of testing since that seems to be very unlikely to function well with a GPU...

Of all the amazing watercooling I have seen in M1's thus far, that link takes to cake for my favorite thus far. Something about it's simplicity makes me want to do the exact same thing in my build.
Cooler fit just fine it's an error on Lian Li's part. Case can fit up to 160mm coolers from the research I did before purchasing it and the U12S fit perfectly.

boltdepot is where I purchase all my metric hardware online. All 12.9 too, I replaced all the stock hardware since the lian li hardware is very soft from the factory.
Have you considered removing the heat spreader on the left side of the cpu socket? I am assuming that is what's getting in the way correct? I had to remove it on my Stinger MB in order to get the L12 to fit too. Month in and have yet to notice any issues. Guess because the fan is still blowing...
Anyone have some first hand knowledge on pcie risers for their M1? Trying to figure out if there are any other "good" options besides a 3M twin axial. Not sure I want to purchase it just yet because the shortest size is 250mm. Would be great for 3M to make some custom sizes like say 150mm.
