We ran demos and test when Vista came out. We decided that it wasn't worth the upgrade at the time. We stuck with XP pro at work in our domain environment. Looking back it was definitely the right decision because it saved us money and XP pro has remain relatively stable with SP3.

This is the setup:
Windows 2003 DC using AD and group policy
Workstations are all Windows XP SP3
All workstations are on DHCP
The update worked sucessfully with 95% (maybe 300) of the desktops using WSUS
Only about 10-20 desktops are experiencing this "stuck" issue

We have a wsus box running as a vm. It's was originally a physical box until we did the p2v. So far it's being doing pretty well. As some has mentioned, just make sure the settings in your GPO are correct.
