I have one of these monitors, have had it for a few years now.
I have noticed some dark spots near the center of the screen lately on bright scenes, may have always been there but it's either becoming more noticeable or maybe I just noticed and I will never be able to sop noticing them...
TFT central classified this as class 2.

Take this from someone who blindingly downgraded their gaming (moved from a 24" BENQ screen to a 16ms lag Asus PB278Q), it's noticeable in FPS games (not by the eye but by the scores)

Too bad about the noise... I'd rather have a slightly wider chassis and slim 90mm fans blowing side to side or something than this blower setup...
The zotac kit you refer seems like a good alternative
As a server only you can't do better than Gen8 microserver. Even transcoding would be easy, x86 CPUs are all of them fast enough nowadays. You won´t win any benchmark competitions but you can transcode fast enough to stream to oher devices and it´s pretty much silent in my experience.
Even if you manage to power the GPU, you have to disipate the heat. 300W would be plenty for your setup but that setup is not enough for sleeping on highest settings
I wouldn't go with RAID AT ALL
For a media storage server it makes no sense (redundancy does make sense, just not RAID). I'd go for something userspace on top a reliable filesystem such as GlusterFS. That way you can keep all your drives in a single BIG pool and replicate what is important with...
