Where the idea sounds cool, this really only works for "text" and having a lot of text on the screen. The other issue would be that where the authorized users eyes are focused, and he moves his eyes to read another area, onlookers could potentially figure out the area of text that is valid...
Totally Fake.. There would be no way the touch screen would work without the iPod/iPhone OS loading drivers for it to even select what OS to boot into. The touch screen requires the proper .kext driver file to even work.
