Don't bother with the second card. You have to enable surround to game on multiple screens. The card can drive 4 screens. There's no appreciable difference in performance unless surround is on.

That has to be a mistake. There's no way that an i5 wouldn't be good enough. There are so few i7s out there compared to i5s and i3s that they would be severely gimping their install base.
