Radiator size?
What size radiator should I use for cooling the EVGA X58 SLI (non-classified) NB / SB water block AND the mosfet as 1 loop? 1X120? 2X120? I'm looking to keep it as compact AND effective as possible...

Considering all that's in one loop, I would go with a 3 x 120...

I think even with overclocking/overvolting, a 1x120 should be plenty for just NB/SB and mosfets. Per OP description, it'd be about the same as running a full cover mobo block. Now, if GPU and/or CPU are added, then that is a different story.
