If going for a 5600x, stick with the B550. Unless you want to pay premium for the 12 series components, not just the CPU but the board and memory, I would stick with AMD for that reason alone.

When I had the 5800x, when bench testing, I was idling at 38C and spiked all the way to 87C pretty consistently during Cinebench. This was using the H115i ELITE CAPELLIX inside the 4000x RGB.

This. I have the 980Pro on a x570 AM board. No crazy significant difference in gaming loads (currently) compared to my buddy's rig that I built (z490 + Sabrent Rocket Q) and not a night/day difference compared to my old setup which utilizes Samsung SATA SSD.
Voted, 3060ti Gigabyte Gaming OC (Newegg combo with Oloy via iOS app + apple pay), 3070 FE (Best buy via website on release day + luck and before they added in store pickup only), 3080 Gigabyte Vision (Newegg combo with Gigabyte PSU via iOS app + apple pay)
Yeah, I say leave the 3060 as is. The ti is already set and there's only a $100 MSRP between this and the 3070. Unless they discontinue and restructure everything again, it wouldn't make sense. 3080ti with more memory does make sense as there's still a big gap between 3080 and 3090.
Seemingly they are only doing store pickup only. The last time they did that for the 3060ti, it was a nightmare even after having it in cart, couldn't check out. I am guessing by now allocations are spent.
Value wise, the X570 GB is $170 and you're paying less, a better value. In terms of board quality, unsure which is better, the MSI or the GB. Maybe wait for others or check the AMD board forum or even reviews in general.
