I've found 256kbps to be a good compromise for me. I keep higher quality stuff on my computer to listen with real headphones, but for portable audio 256 is plenty.
Yeah, I believe this is an issue with the icon preview cache. A preview of the icon is cached for quicker access at some increment and I think when you install something it just takes a while before it gets cached. This is something I've experienced from way back in OSX, even this post from 2004...

why not just do an Airport Extreme with whatever USB devices plugged in? I've heard of many people using an Airport Extreme with a Drobo plugged in. something like this: http://www.flickr.com/photos/timwilson/3350789684/. Only downside would be USB speed, which isn't too bad really.

quicktime does it. It's not exactly perfect or easy but it will do basic stitching and then exporting. Although I'm pretty sure it only exports as .mov.
