Mine had some coil whine for a bit when first stressed from gaming also. Didn't last long though as it was something that bugged me and went away within the same day or two.
I type on a Filco Otaku every day. I don't even need the lettering on my board.
However, when gaming it's nice to have a board with visible keys because one hand on the board isn't as intuitive as touch typing with both. Back lighting is awesome for gaming.

Down the road there will be z68's from Gigabyte and ASUS when the time comes to squeeze more performance out of the CPU. (I'm actually surprised MSI hasn't jumped into the void.)
sgtspiff, the stock intel cooler is fine. My cpu sits around 32 C on average.
Some people upgrade to aftermarket coolers to lower the noise or to be ready for a Z68 board.
To be honest, I can't hear the CPU fan over the 180mm in the top of the case.

No need to have it modular if you build the case up as it was designed. My setup uses every connector so modular would be moot in some builds.
Cables could be shorter in my experience but that's something easily fixed if you have the tools and the time/patience.
