4870x2 some thoughts...

Hi

I'm going to run 1680x1080 with Max settings, max AF and 2x AA(2x AA do fine for me in 1680x1080).

I want a quite stable fps that doesn't drop from 100fps to 15-20fps, especially in multilayer.

The cheapest GTX280 cost around 10% cheaper than the cheapest 4870x2.

Games that I will game;

Warhammer online
CoD4
Crysis
Spore
GTAIV
TF2
CS:S
Farcry 2
Mirrors Edge

I have E8400, do I need to OC the CPU to squeeze out all power from 4870x2?

Some of those aren't released yet, so we can only speculate. You would probably see a benefit from overclocking your CPU to at least 3ghz. Most people that have moved from the 280GTX have felt their upgrade to the X2 to be worthwhile.
