I'm not sure about the mobo (don't think I need something that good?), ram (maybe pay more for higher quality stuff?), and the CPU fan (maybe I should just use the stock fan?)

I want to build a quiet rig so I think I made a good choice there with the case but I'm not sure about the fan. I mainly plan to use this comp for gaming, surfing the web, watching videos, and all that good stuff.
My budget is around $1,600 for the tower


I also need some help picking out a keyboard (looking for something that has a nice, clean look about it. Don't want some crazy gaming keyboard like the G15. maybe something wireless would be nice)

Any advice on any part of my build will be greatly appreciated

I would go with 2 x 2gb memory sticks. I wouldnt stay with the stock fan even if not overclocking. Unless you are getting a 24" or bigger lcd, I would stay with a p35 motherboard and a single card.
 
Unless you are going for SLi ditch the 680i board. IMO if you are using an Intel CPU there are very few reason not to go with an Intel chipset. As said above P35 is prob good enough but if you feel the need for that little bit extra of performance go for a X38/48 board.

Personally I would get 4 gigs of ram and drop down to a P35 based board

and if you want quiet get an after market cooler.
