My current Windows 7 Pro system drive is a 256GB SSD that is very nearly full. I want to replace it with a 500GB SSD I just bought. I want clone my current system drive onto the new one. Its been a looooong time since I last did that so I wanted to know if Clonezilla is still a good option for that or should I be using something else? Will Win 7 Pro demand I re-register if I do this or will it continue as normal?

Clonezilla will work just fine. You can extend the partition in Windows after the clone. Win 7 Pro shouldn't complain or become deactivated.

Yes, exactly.
I've done this many times, and it works with great success, on both HDDs and SSDs, so the OP should be fine to do so.
