Erasing Windows and program file folder without formatting

I'm getting a pair of OCZ Vertex 60GB for a raid 0. I'm currently using my 1TB drive as a system drive and storage. I want to erase everything in the drive except for my videos and music. How can I do that? Thanks.
 
After you get your new drives, disconnect the old drive and install your OS on the new ones.
After the installation is complete, power down and reconnect the old drive.

Now, boot to your new installation and you can delete anything you want from the old drive even the Windows folder or the program folders.
 
You may need to take ownership of the folder you want to delete.
 
Make sure you are logged in as an administrator, and it should let you. Also make sure it is not running any "features" on or from that drive, such as system restore.
