ESX Server setup

I am currently looking to build an ESX server based on a Dell Poweredge 2800 Server with Dual Xeon processors, 4GB RAM, and populated with 8 72GB HDDs with hardware RAID.

What I would like to find out is how others have setup their ESX servers to handle multiple server environments while keeping performance and reliability in mind and keeping this on a single server.

My plans are to place the drives in this configuration:

ESX OS - Mirrored
Images1 - Mirrored
Images2 - Mirrored
Images3 - Mirrored

My reasoning for the above configuration is that since SCSI RAID is able to access the arrays simultaneously, it would keep the performance higher while mirrored drives will keep redundancy in case of HDD failure.

I do realize the performance will be directly dependent on how stressed each server environment will be. I plan on spreading out the heavier load amongst the mirrored drives.

Any thoughts?
