I have an Enermax Liberty 500W powering an Asus A8RMVP with X24400+, 4X1GB PC3200 @ 400MHZ, and a HD4870X2. It's powering everything just fine, the system is nice and stable.

I want to upgrade to an Asus P5Q Deluxe with E8600, 2X2GB PC8500 @ 1066, and the same Radeon 4870X2.

Do you guys think I should be fine? From what I gather the E8600 should draw comparable power to the X24400+, and the DDR2 RAM will draw less power than the DDR.

You should be fine, although I would suggest you go up to something like the Corsair HX620 or TX650 in the future just to have a bit of extra headroom. Your system will probably be using in the ballpark of 400W DC under load, which I'd be just a little bit uncomfortable with on a 500W unit. Realistically though, you won't be stressing it past its rating.
