I am running 2 Sapphire RADEON HD 4830 512mb in Crossfire

Would I see much of an improvment if I bought one with 1 GB for Ram?

You mean going from two 4830 512s to one 4830 with 1 GB

or

going from two 4830 512s to two 4830s with 1 GB

Either way any performance increase that would be there, which I suspect would be little, would not be worth the price

Crossfire / SLI setups are always limited by the weakest link.

That is correct with Crossfire.......generally dumbed down.
SLi has been much improved and generally lets each card operate independantly as far as clocks and memory.
Of course in SLi you typically never have two cards with different memory capacity so that's a moot point there.

a 4890, GTX275/285 would be much better as a choice.

Multi-card setups are ONLY good when there is no better SINGLE card option. EI you have a GTX285, well nothing is really faster for single gpu, so you get another. 4830 you can get something faster then 2 of those.
 

multi card really isn't worth it for you, it's a huge waste.
instead of buying 2 more 4830s, grab a single 4890 or a GTX275 and you'll have a better experience over all, less heat, less power, less hassle with older games

a 4890 would be the best bet, you could always grab another later, and I'm fairly confident that 2 4890s > 3 4830s
