Required power supply for setup i'm about to purchase?

Using Antec Solo case, I don't want or need some 900-1000watt ridiculous priced PSU, I'm wondering what I *NEED* to achieve my goal and what offers the best price/performance

500w-600ish would be more than enough and not stress the supply letting it run cooler and live longer, more would overkill probably. Be sure to find one with most of the output on the 12V rails. I am a Corsair fan (because they are very good value for the money, Disclaimer - I own a VX-550 and consider it, one of, if not the best, bang for buck supplies available. Quiet. ) A VX-550 would work great and not cost an arm and a leg if you are not looking for modular cables or some other fancy feature.

Check the reviews here on the main page and on jonnyguru.com. If a commercial load tester was not used and the supply not taken apart and the internal construction/components commented on, completely ignore the review.

Would something like a Corsair 620HX still be enough with a 2nd 8800GT? I'm guessing it would, just curious... I'm building a system around an E4500 (OC'd), 2-3 HDs (250GB & 160GB), 2 opticals (DVD-RW & DVD), a single 8800GT, 2GB DDR2, and an X-Fi but I'd like to have the headroom to move up to a quad-core or a 2nd 8800GT in the future. I'm sure a 520HX would suffice for now but... (with the E4500 and a single GT)

A 2nd 8800GT would run just fine on an HX620 with your system. Really even the HX520 would work, but the 620 would give you a bit more headroom and probably the fan wouldn't spin up as loudly when the system is under heavy load.

Each 8800GT is about 110W, and the E4500 I believe is about 65W. Hard drives about 15W each, optical drives about half that and only when they're spinning at full speed. Memory, sound card, motherboard, etc, all use less than 75W total.

I'd wager your system with a single 8800GT would struggle to push 300W under maximum load. You could use the VX450 to power it and be fine, but if you want the ability to move up to SLI in the future, the VX550 or HX520 would be the better choice.

If you wanted to have some headroom for more power hungry cards/processors in the future, the HX620 or TX650 would be a good choice.
