Should I partition my RAID5 array?

I'm completing my Raid5 setup with 6.36TB usable space. (8drives)
Now, the time is soon at hand to decide if I should make any additional partitions on it or just leave it as a one big GPT disk with only one partition.

It will be used only for storage and streaming media per demand 1-2 twice a day.
All the other activity will be confined to 500GB system disk while the array sleeps.

I'm leaning towards only one partition solution with different network shares (folders) for each purpose needed. (no eventual storage constraints)

I'm afraid that I will limit the future usability and data safety if I miscalculate partitions sizes now and make to many or to few of them.
If that happens who knows how resizing partitions that have data on them will work out. That scenario and sheer amount of data to be lost sounds a bit to risky to experiment with down the road.
What is the down side of using just shared folders?

No, no don't worry. GPT all the way here.
All clients will be Vista.
Old tech through he window :D
