Just as a reference, BFG states that to run two of their 7900 GS cards in SLI mode, they recommend a minimum of a 450 watt power supply that can put out at least 28 amps on the 12 volt rail.
According to Silverstone's specs, the ST-50EF can crank out 35 amps constantly from the 12 volt rails, and 38 amps peak, so you should be just fine with this power supply.
I bought an eVGA 7900 GS KO a couple days ago so I'm glad SLI is an option (eVGA concurs that 28 amps is needed on 12 volt rail for SLI).
Not planning on getting vista anytime soon so Directx 10 wasn't a selling point for me in getting a 8800 card. I'll decide in 3 months whether I want to step up to a new card with eVGA or SLI em. Might depend on whether or not 8900 cards are out and what the cheapest option is for that group.
