I read the Wikipedia article, but would prefer a more [H]ard answer. What's the difference between the two? Is one better than the other? I'm asking because some recent kits I bought are single-sided, and I've never seen single-sided DDR2 RAM.

There was a time, where single-sided was preferred because not all motherboards handled double-sided too well. Don't believe this is too often a problem these days.

It is mainly used as a cheaper way to produce more memory. Get more quantities of the cheaper less-dense memory that they're buying anyways for their smaller sticks and stuff them all on a DIMM and make more profit.
