Here's what I'd like to do from the start:
-VPN server for when I'm out of town
-NAS for local storage and accessing goodies when on the road
-Future test servers that will likely include many forms of Linux and Windows.

I was thinking a dual or quad core xeon with 16-32GB of ecc DDR3-1333 ram.

I currently have a few 2TB seagate 5900RPM drives and 2x 3TB 7200RPM seagates.
I also already have a case I'll be using for the build that can hold 8 drives total.

Budget?
Lets say MAX $800 to get it completed with a few more 2-3TB drives. Total drives when all done will be 4-6... So nothing too crazy.

What do you guys think?

More info needed

What visualization product you using?

Two separate boxes or an all in one solution?

Likely ESXi

This will be a all in one solution.

I do have a atom based server that I could use for VPNing if need be (for security reasons). But I'd like to just do a all in one box if possible.

For a future proof (Or somewhat) server, I would load quad cores w/ 32+ gb of ram. I have multiple dual core boxes with 16gb and they are basically useless now...

Yeah, that's what I was thinking

If keep the atom box for your firewall VPN,
That sentance seems somewhat incomplete :p
But yes, I think that atom box would do well as a firewall/vpn.
