Win 7 and strange hard drive settings

I just installed Win 7 Ultimate 64-bit, and I have noticed that whenever I am copying large files (as I restore my stuff from the previous install) that it brings the system to a crawl. Webpages are slow to load, takes a long time to open other programs, etc - much, much more so than Vista. I checked and I am using the Intel drivers for the ICH10 controller, the drives are both WD Caviar Blacks (640GB) in AHCI mode but when I check the Device Manager for the drives it shows them in Multi-word DMA mode 2? My third drive (WD 5000AAKS) which is hooked up externally (eSATA to the ICH10) shows Ultra DMA Mode 5.

I'm guessing this is my problem (the DMA Mode 2) but how do I get Win 7 to change this?

Hardware config hasn't changed since Vista. Should I scrap the Intel chipset drivers for the controller and rollback to the Microsoft one?
