Well, to be fair, we've seen $700 (and higher) video cards.
i remember when the 7800GTX 512MB was released and going for $800. someone here on [H] got two for SLI and posted a pic of his receipt for $1600 + tax. gratuitous spending or not, i was jealous of the awesomeness.

If the strongly rumoured performance is reality, if Fermi is only close to 58xx performance it would be breathtakingly optimistic (or arrogant) for Nvidia to launch at the sort prices previously seen. I wouldn't rule out $600-$700 price points altogether, but with roughly equivalent ATi cards that would be at much lower prices only the most die hard Nvidia fans are going to stump up that sort of cash. That's why I think Nvidia will target $299/$399 - I don't actually believe it will happen in reality, I'm sure street prices will go much higher as happened with 5850.$299 & $399 are not far more credible, they are simply far more desirable.
