You need to know exactly what resistance you need, don't just order a 10k and think that it's "likely" to work. Go to Digikey and just search for "thermistor", there are over 2000 NTC listed ranging from 1 to 1.4M ohms. They are rated at the resistance at 25c so you really do need to know...
Grab the Koolance pot and you'll be happy with it. I have one of Kingpin's pots, a Koolance, and 2 Mousepots and the only difference in any of them is the ease of controlling temps. You won't get a better oc with any of them compared to the others

To be honest, I dont' know, I've never had both units running at the same time and all the fans on. Running one side at a time, the loudest thing is the 120X38mm 114CFM Panaflo on the back side of the condensers..... you can't hear the compressors running.

I lap all my cpu's and have never had a problem with touching the pins..... that said, it's still a good idea not to do that, just leave the black plastic cover over the cpu while you are lapping, that will prevent you from touching the pins if it worries you.

I'd really hold off on trying to get it modded until you see if it will do what you want..... my guess is that it will. As you pointed out, most of the guys having problems are really pushing the quads with very high vcore and high clock speeds for benching. I think at a moderate oc the unit...
