how should I do this (replacing RAID 1 drives)

I had onboard RAID 1 with two 300gb drives. One of the drives was removed cause I needed it for something else (I was already planning on swapping the drives with 80gb drives)

So the computer has one 300gb drive in it.

What do I need to do other than imaging the 300gb to the 80gb? (like how would I rebuild the array once the data is on the 80gb)
 
Best to setup the 80GB array and then transfer the data.
 
setup RAID 1 with two drives connected in the BIOS, then just add the 300gb drive to the third SATA port and image from that drive to both 80gb drives? Then if I disconnect the 300gb it should boot up into windows?
 
you need to boot off this drive?
Maybe consider using GParted as the clone tool, provided that it supports your hardware?

and I have an Acronis True Image boot disk. Is there any reason I should use GParted instead??

No, gparted is free is all.
