can someone please educate me as to why one would want ddr2-750 over ddr2-800?

Two words:

It's cheaper.

And the only time a person would notice the difference between DDR2 6000 and DDR2 6400 would be in benchmarks that are specifically testing the speed differences. In day to day operation, you are never going to notice. It might translate to a frame per second or two in a game, and as such, obviously if you can get it, grab this stuff, quick.
 
It's 750@4-4-4-12... it's very likely you can get it to 800@5-5-5-15 with no problems at all.

The comments showed one person running 3-3-3-18 I think... some oddball speed timings but hey, it's $40, I mean really... jump on it, quick. :)
 
Honestly, the speed difference between even 800 and 667 is negligable, most people won't notice at all, especially since this stuff has better latency. If you're that worried about the speed, a faster hard drive would be way more noticable. Good price.

However, you can get the A-data http://www.newegg.com/Product/Product.aspx?Item=N82E16820211165 for cheaper since it has a free shipping promo. DDR2-800 for $42.99 shipped vs the DDR2-750 for $44.98 shipped. No heat spreaders on the A-data.

Maybe I should spend the money on a 2x2GB kit for my main rig instead, then push a 2x1GB kit down to the file server.
