Alright, figured it out. Was as simple as continuing to hold down the button once it's been powered on. As in, keep it depressed until the light turns solid.

To restart the iPod hold "Menu" and the center click button. Alternatively, use a USB (or Firewire I suppose) cable to hook it up to your computer.

When I turn the headset on, the light flashes. Holding for any amount of time other than to turn off does nothing.

The problem is that I can't get the headset to go into Discover mode.

HTT will mean just about nothing in the long run, so you ought to play with dividers to get that ram to the highest it can stably support, while making sure that the CPU is as high as possible. HTT can take the hit, the others can't.
