My only gripe with OSX are the power controls in comparison to say Win7. It lacks settings to stay awake, etc. There are some apps that try to solve this problem such as NoSleep, but they don't always work after an OS upgrade.

What you're describing is a potentiometer.
I don't know much about these PWM implementations but for an LED display you would want to use a current limiting resistor. I imagine it will get quite hot.
