I too am just starting out with online play but am curious as to what level do new types of missions begin to appear ? Right now all I see are races everywhere.

Well I think that 3 way sli has been scaling pretty well with the 600 series. The gains that you get from adding a 3rd card is seen when gaming at 2560 and up or when upping the AA settings.
I am on the same boat as you, looking to max out the titles you listed at 25 x 16. From the research ive done 670 sli should do the trick, I personally am leaning towards 670 3 way sli.
Just got it today, running at 2560x1600 max settings w/4aa 16af. Runs at 60fps except for some drops to low 50s when entering new areas. For the most part it runs really smooth, played with some settings in ccc (10.4whql), but have yet to try them out. Great game overall, love the movie feel.
