You cannot "build" an apple computer. You could hack osx on to normal x86 hardware (no support or anything, and borderline illegal.) However apple hardware uses standard PC parts (ram, hdd, vid cards) so you can upgrade them yourself

how do you know about fites? I personally think it's easy. for something from source "./configure (configs, if errors investigate, install missing packages, google is your friend) make make install" makes the ap, installs it where it needs to go. or just download your fav distros...

apt-get is your friend. (or yum, installpkg, emerge) seriously, most distros have something that makes it easier, and once you know what you're doing its easier than windows (/ nix fan boyism)

that could be FAT (I think it has a 2gb limit on files) if you format the drive as HFS+ (apple FS) then you should be fine, I have a few 10gig+ files on my external drive

The only way you will be able to sniff with windows is if you are on the same hub as the ap. as windows doesn't allow you to passivly sniff with wireless (why netstumbler can get detected, it's active)
