Yeah I noticed the twitchiness too with the Wii channel interfaces. If you check out Zelda: Twilight Princess videos, though, it looks really smooth. Like you said, maybe a sensitivity setting, or I've also heard that being really close to the sensor bar will screw with the movement.

On the main window, click "Settings" in the bottom right. Select "Fan Control" from the dropdown list. Check the Override Fan Speeds box, and then you can select the option there.
Well, you don't have to, but it would be a good idea when overclocking. ATItool can set the fan speeds a little more "aggressively" than the norm. Helps to cool the card better. I use the "Try to keep keep GPU temperature at: ___ " option. For my X800 Pro, I set this temp at 50C.
If you do want to learn to fly, do it an empty or nearly empty server. Or else people get angry. While I find piloting a jet with mouse and keyboard is indeed difficult, it is entirely possible to be an ace chopper pilot with mouse/keyboard. Just takes practice.
